What Is The 31 Day Vegetarian Challenge?
For every day of the 31 days in July, I’ll be releasing one of my favorite vegetarian dinner recipes. These are some of my easiest (and most delicious) vegetarian recipes to help inspire your meals and celebrate summer cooking!
How It Works
Every day in July I’ll share a dinner recipe idea. The recipes will be released in our Eatmail, Instagram, TikTok, and at the bottom of this page. To enter the challenge and have a chance at winning one of the prizes:
- Make any of the recipes in this series (recipes below)
- Leave a thoughtful review of the recipe
- Fill out this form to let me know you’ve left a review
- Be entered to win prizes! Enter as many times as you want by making as many of the recipes as you’d like.
Bonus Entry: Get a bonus entry for each recipe you make by also sharing a photo of your finished recipe on Instagram, tagging @liveeatlearn!
What Are The Prizes?
There will be 3 winners chosen at random. Winners will get to select which prize they want (the 1st place winner picks first, then 2nd place, then 3rd place). Winners will have their choice of the following prizes:

5-Piece Japanese Knife Set
My go-to knives! We use these gorgeous Japanese steel knives for all of our test kitchen cooking. They come with a magnetic wooden block for storing them beautifully. This prize was donated by Santoku Knives ($512 value). Available for worldwide shipping.
5-Piece Ceramic Hybrid Cookware
This ceramic hybrid cookware is my favorite new kitchen discovery. It’s triple-clad + ceramic nonstick + stainless steel. Basically, it’s everything great jam-packed into a pan. This prize was donated by Hell’s Kitchen ($399 value). Only available for U.S. shipping.
Amazon Gift Card
Get the gift of everything! ($100 value)

Other Important Details
What if I need to make dietary modifications to a recipe?
Go for it! We often include some possible ingredient and dietary swaps in the recipes, but you’re welcome to change up the recipe to suit your tastes or dietary needs. When you leave your review, it’s helpful if you note what you changed about the recipe in case others want to do the same!
How old do I have to be to participate?
You will need to be 18 years or older to enter to win a prize.
Can I enter multiple times?
For each recipe you try, you can enter once by leaving a thoughtful review, and again by sharing a photo of your version of the recipe on Instagram (tagging @liveeatlearn).
Do I need to live in the U.S. to win?
It depends on the prize. Knives and Amazon giftcard can be won by anyone worldwide. Pans are only open to U.S. shipping addresses.
How will winners be chosen?
By filling out this form, you are entered to win one of the three prizes. Winners will be selected at random using a random number generator on August 14th.

Hi,
I would like to do this, but I live alone and I don’t want to do a lot of preparing. Also, how much does this cost?
This challenge is totally free! You can make as many of the recipes as you would like at your own pace. The giveaway closes on February 7th, details on how to enter above ๐
My wife is a big fan of the blog, so I wanted to make a nice, vegetarian meal for our lunches tomorrow.
This exceeded my expectations. I had a bowl when it cooled on the stove with some leftover rice, and it was both satisfying and delicious. The warm spices, coupled with the easy prep, ensures I will make this again.
Looking forward to trying other recipes in the challenge, but I cannot recommend this one enough.
I’m so happy to hear it, Zachary! Thanks for popping in! ๐
Hi Sarah,
I have a question about the recipes that are included in the 31 Day Vegetarian Challenge: I have subscribed to receive the recipes by email, but I seem to be getting two different lists of recipesโฆ on this page, I see Eggplant Parmesan for day 1 and Gnocchi Soup for day 2, but Iโve received the following three recipes by email (in addition to the previous 2): Chickpea Gyros (day 1), BBQ Mushrooms (day 2) and Orange Cauliflower Wings (day 3)โฆ Would any one of those 5 recipes count towards the challenge? Iโm a bit confusedโฆ Thanks in advance for the clarification!
Thanks so much for pointing that out! I somehow made a mistake in our email system, those were last year’s recipes (although if you want to make them I’ll count them for this challenge as a thank you for bringing this to my attention! ๐ )
I am the only one that eats so how can I participate?
That’s okay! You just cook any recipe in the series and leave a comment letting us know how it went ๐
Hi, Sarah I thought vegetarian was to stop killing animals then to be healthy?
Boursin contains very high levels of cholesterol. As such, people who have high cholesterol, on a restricted diet or want to eat more healthy should avoid this French cheese.
Looks and sounds tasty.
Thanks, Bob
Hi Bob! People are vegetarian for many different reasons, from animal welfare to health to the environment. I create recipes for people from all different camps ๐ That said, I also believe “all things in moderation”, and Boursin certainly falls into that!
