One of the many things they are good on? Toast. Avocado toast is in chic cafe’s all over the place. So why not make it at home to save on costs and make it exactly how you like it?
We’re whipping up FIVE delicious variations of avocado toast that can be enjoyed anytime of day. There’s the classic avocado toast, Mexican-inspired pico de gallo, farm fresh goat cheese and chives, super simple everything bagel, and avocado toast with egg!

Ingredients for Avocado Toast
For avocado toast, you need two basic things – avocado and toast!
Bread: I love to use sourdough bread or artisan bread for a full slice of avocado toast. Otherwise, using a baguette is great for bite size servings! The best bread for avocado toast is one that has some good structure to hold up to all the delicious toppings.
Avocado: Any type or variety of heart-healthy avocado can be used but using a ripe one is key. To pick the best avocado, find one that yields a little bit when squeezed (like squeezing a memory foam pillow), then it’s perfect! If it yields a lot it is over ripe, and if it feels like a baseball then it is not ripe yet.
Classic Avocado Toast
This version of avocado toast is, well, a classic! Lemon juice and olive oil makes for a super bright and fresh bite! You could also top with some salt and pepper or red pepper flakes for an extra kick!
Pico De Gallo Avocado Toast
As a lover of vegetarian Mexican food, pico de gallo is a personal favorite. It can enjoyed anytime of day and has all the delicious flavors of my favorite salsa. All you need is store bought pico de gallo and avocado to top your toast. You can also make your own pico de gallo super easily!.
Goat Cheese & Chives Avocado Toast
Ok, this toast is a little more complicated – three ingredients instead of two, things are getting crazy! But, it is worth it! This toast has creamy goat cheese, crunchy radishes (best texture!), and flavorful chives making it so darn good!
Everything Bagel Avocado Toast
Another great avocado toast that only requires one more ingredient – everything bagel seasoning! Simply top your perfectly ripe avocado slices with everything bagel seasoning and enjoy!
Avocado Toast with Egg
My other favorite! Nothing is better than creamy avocado and an over easy fried egg! You could cook the egg however you like, but I highly recommend an over easy egg, fried in avocado oil, and with some hot sauce (if you’re feeling wild!).
Healthy Toast tips
Choose the perfect avocado: Like I mentioned before, choosing the perfect avocado is critical. No one wants mushy avocado or avocado that crunches. If you want to enjoy the avocado the day you buy it, pick one that yields a little bit when squeezed in your hand. If you want to enjoy it in a couple days, the avocado should just start to yield in your hand but still somewhat feel like a softball.
Customize: The great thing about avocado toast is that avocado is incredibly mild in flavor. So, you can top it with whatever sounds good! While I have listed five delicious toppings that I love, feels free to alter or modify to what you like.
Make it fresh: Unfortunately, avocado will begin to brown as soon as it is exposed to the air. For this reason, it is best enjoyed right away. But, if you want to make this in advance, you could toast the bread and prepare all other toppings ahead of time and then layer them on as guests arrive. Avocado also responds well to acid and if it is coated or spray with lemon or lime juice, it will stay fresh and green longer.
Use good bread: Toast is only as good as it’s bread. By using a sturdy, but soft on the inside bread, the toast is sure to be delicious!
Storage: Unfortunately, neither toast or avocado keep the best. Toast will get soggy and avocados will turn brown. However, if you have left overs and you are wondering how to prevent avocado from browning on toast, you can remove the toppings and store them in a sealed container with a little bit of lemon juice to keep from browning. Then, store the bread sealed and separate from the toppings. When ready to eat, toast the bread again and top with the toppings. Toppings will stay good for up to 3 days in the fridge.

Base
- 2 slices bread toasted
- ½ avocado
- Pinch salt and pepper
Classic Avocado Toast
- ½ tsp lemon juice
- ½ tsp extra virgin olive oil
Pico de Gallo Avocado Toast
- ¼ cup pico de gallo
Goat Cheese and Chives Avocado Toast
- 10 slices of radish
- 2 Tbsp crumbled goat cheese
- 1 Tbsp chopped chives
Everything Bagel Avocado Toast
- 1 tsp everything bagel seasoning
Avocado Toast with Egg
- 1 tsp oil
- 2 eggs
Instructions
- Classic Avocado Toast: Scoop avocado into a bowl and mash together with lemon juice, oil, salt, and pepper. Spread onto toasted bread.
- Pico de Gallo Avocado Toast: Cut avocado into cubes. In a bowl, toss together avocado, pico de gallo, salt, and pepper. Spoon onto toasted bread.
- Goat Cheese and Chives Avocado Toast: Spoon avocado onto toast and mash with a fork. Top with sliced radishes, goat cheese, chives, salt, and pepper.
- Everything Bagel Avocado Toast: Thinly slice avocado, then arrange onto toasted bread. Sprinkle with everything bagel seasoning.
- Avocado Toast with Egg: Heat oil in a large saute pan over medium heat. Add the eggs and cook for 3 to 5 minutes, or until white is completely set and yolk is still a bit runny. Scoop avocado onto toast and mash with a fork, then top each pice with a cooked egg. Season with salt and pepper.

I had never tried a fried egg on avocado toast before I tried this recipe. It was so good! My other favorite avocado toast combination is avocado, sliced cherry tomatoes, and feta cheese with lemon juice and salt.

I found a cabbage leaf or part of one placed on top of cut avocado will keep the avocado fresh. I think it’s because cabbage contains vitamin C. Try it.
