Eggplant is an extremely low sodium veggie that provides significant fiber but few calories. The wide variety of eggplant types (Italian, Thai, Indian, Graffiti, etc) supports eggplant recipes far beyond the traditional Eggplant Parmesan. Look for eggplants with smooth, shiny skins that are uniform in color and heavy for their size. Smaller eggplants tend to be sweeter, less bitter, have thinner skins, and fewer seeds. The conventional wisdom is to store them in the refrigerator for up to four days, but they tend to keep longer than this perhaps just becoming a bit softer.
