There are so many mushroom varieties that we can’t begin to list them here. White mushrooms are generally an economical option, but my other favorites are portabello, shiitake, and oyster. Choose well-shaped mushrooms with a firm texture, and avoid spots and slime. Refrigerate mushrooms in their original container or paper bag up to one week.
