Ounce for ounce, tofu has nearly as much protein as chicken breast. From least to most firm, the most common types of tofu are silken, soft, medium, firm, extra firm, and super firm. This difference in firmness is the key to varied tofu recipes.
If you’re going to eat tofu within a week, you can refrigerate it. Immerse the tofu with cool water and store it in a tightly sealed container or the tub it came in covered with plastic wrap. Change the water daily to keep the tofu moist and fresh.
