MONDAY: Tempeh White Bean Chili

Itโs full of protein and unexpected flavor combinations that youโll absolutely love. This chili is obviously made with white beans but adding sauerkraut gives it a unique texture and taste and the spices just seal the deal. This is a recipe youโll just have to add to your weekly menu!MEAL PREP TIP: Make enough to have throughout the week or store in the freezer up to 3 months.
Our Eggplant Curry is a savory and filling Indian-inspired bowl of deliciousness. Curry is usually one of my favorites to whip up, but this eggplant curry recipe is out of this world. Made with shallots, garlic, and garam masala among other spices, this curry is so flavorful that it will soon become one of your favorite meals. Serve it over rice for a complete and extremely filling meal. The best part? Itโs ready in under an hour!PREP TIP: Prep and cut the eggplant and store in the fridge until you are ready to cook the rest of the curry.
If youโre looking for a veggie-packed dish, try our Buddhaโs Delight. It features one of our favorite meat alternatives, seitan and a delicious sauce to compliment. This Chinese dish is traditionally served on Lunar New Year and although our recipe isnโt truly authentic, youโll love it just as much. Youโve got tons of veggies options for this meal, such as mushrooms, bok choy, broccoli florets, snow peans, carrots, and bell pepper, but you can add your favorites to make it your own. PREP TIP: Chop up all of the veggies and store in the fridge until you are ready to cook.
This Farro Risotto is a healthy risotto option that is still full of rich flavor and will satisfy all of your cravings. Filled with mushrooms, garlic, onion, peas, and farro, this dish is a great way to try something new and different. It is creamy, cheesy heaven and we just know you will absolutely love it!MEAL PREP TIP: Make enough to have for meals throughout the week.
Breakfast for dinner anyone? Try Shakshuka for your Friday night dinner. This is a traditional North African meal that is packed with flavor and so easy to make, as it only takes one dish to do so. Itโs basically North African inspired tomatoes and vegetables, topped with eggs and eaten with the bread of your choice. PREP TIP: Chop veggies when you have time, so all you have to do is cook everything together when you are ready to eat.
This weekโs bonus is a quick and healthy snack or on-the-go breakfast. These Coconut Coated No Bake Energy Bites are made with prunes, almonds, chia seeds, and OJ. Youโll have energy all day long!
