As a vegetarian, it’s difficult to find suitable meat substitutes, but mushrooms have the PERFECT meat-like texture that will help satisfy your “meat” craving. I’ll be the first to admit that I didn’t love mushrooms until I started experimenting with recipes using them.
There are so many types of mushrooms and we have a variety of mushroom recipes on our site. We are going to focus on easy-to-find mushrooms, like button mushrooms or portobellos for the purposes of this week’s meal plan.

Our recipe provides alternatives if you are wanting a thicker consistency, but this soup is really filling as is. I know I crave soup weekly, even in the hotter months!

Meatloaf has never looked as tasty as our Mushroom Meatloaf. The combination of button mushrooms and impossible beef creates the perfect “meatloaf” texture. It isn’t meatloaf without a ketchup topping, which we have perfected. Who wants real meatloaf when you can have our incredibly delicious Mushroom Meatloaf!
PRO TIP: Chop up other veggies you enjoy to mix in with the meatloaf for added nutrients and flavor!
Pasta is essential in every meal plan and this Vegetarian Carbonara is PERFECT for your weekly pasta night. Parmesan cheese and egg yolks are combined to make the most creamy sauce you’ve ever had! Our Vegetarian Shepherd’s Pie is the ultimate comfort dish and is so filling. Complete with fluffy mashed potatoes and loads of delicious veggies and spices, this Shepherd’s pie satisfies that craving for “meat.” In this recipe, we will be making our own creamy mashed potato made with Greek yogurt, and we will also include peas, corn, carrots, celery, and onion in the filling.
PREP TIP: Chop up all of the veggies in advance and store in separate containers in the fridge, so all you have to do is cook them and assemble the pie.
