This week, we are showcasing a week of hearty salads, which is perfect for when you are feeling like you should eat a little lighter (even though they can be extremely filling!). Our salads are filled with a variety of vegetables (and even fruit!) to provide lots of vitamins and minerals to keep your body fueled.
A common misconception is that salads can’t be full meals. Well, I’m here to tell you that our salads are packed to the brim and will leave you so satisfied and wanting more ONLY because of how delicious they are! These vegetarian salad recipes are extremely healthy yet filling and are also really refreshing for the upcoming hotter days.

Start the week off easy with our Everyday Kale Salad. This salad is so simple to assemble, which is excellent for busy weeknights, and is made with fresh produce and topped with a lemony hummus dressing. This particular salad features avocado and apple, which complement the other ingredients so well. We even offer a few variations so you can make include the ingredients you like best.
MAKE AHEAD TIP: chop up all of the ingredients in advance so all you have to do is assemble the salad. Yes - kale does store well in the fridge, unlike lettuce.
Our Lemony Arugula Grain Bowl is packed with greens, protein, and healthy fats. These are packed with so many flavors and we have a variety of substitution options, so we are certain this will become a staple at your dinner table. This dish offers a ton of protein and will definitely fill you up, so be sure to make this when you are feeling particularly hungry!
STORAGE TIP: Make enough for other meals throughout the week, but store the arugula and dressing separate from everything else to ensure maximum freshness.
Who said all salads need leaves? Our Zucchini Corn Salad will cool you down on your hottest days. This recipe features a delicious spice and olive oil blend to add flavor and seasoning to this refreshing salad. It’s also really hearty and filling, but it will definitely leave you wanting more. Zucchini is very healthy, as it’s full of nutrients, so it makes for an amazing addition to any salad.
Pick up a load of French bread to serve this with!

I don’t usually use grapeseed oil just to keep things simple for everyone, but you can certainly use it in place of olive oil!
