This week is all about cucumbers recipes! Cucumbers are one of my favorite ingredients to add to fresh summer recipes and are extremely versatile.
Cucumbers aren’t just for salads! You’d be surprised at how many different recipes we’ve rounded up for this vegetarian cucumber meal plan and the variety within each meal, as well! If you love cucumbers as much as we do, you’ll enjoy these recipes and we promise, you won’t even get tired of eating cucumbers for dinner every day this week!

Start the week off light, with our Thai Cucumber Salad. The sweet and slightly spicy dressing will really bring out the flavor of the cucumbers and other greens, which is what really makes this salad unique. The best part? This salad is dairy-free, gluten-free, low-carb, and vegan.
PAIR IT WITH: Since this salad is a little light, we’ve paired it with our Pulled Mushroom Bao Buns, if you’re feeling extra hungry. You can stuff these buns with extra cucumbers and other delicious fillings if desired. (Instead of baking the actual bao buns, we've included store bought bao on the grocery list + the fillings from the recipe!)
Our tomato Gazpacho is the perfect summer soup! It’s refreshing and light and so easy to make! This recipe goes a little lighter on the cucumber, but only in texture since all of the veggies are blended together to form this creamy soup. Loaded with veggies (and even more as toppings if desired), this gazpacho recipe will become a staple in your household!
Our Portobello Gyros are the perfect vegetarian gyro! The mushrooms are a great meat substitute and are seasoned with Mediterranean spices. The cucumber in this recipe comes from the creamy homemade tzatziki sauce, which you’ll want to make extra of to snack on throughout the week (see the bonus recipe). Once you try these gyros, you’ll have them on the menu every week, trust me!
Not tired of cucumber yet, right? Rudy’s Sunshine Salad is so simple to make, you’ll want to make it all the time! The salad features cucumber, celery, and chickpeas and is flavored with cilantro and creamy tahini sauce.
PAIR IT WITH: This salad is also pretty light, so we’ve paired it with our Avocado Sandwich for a perfectly balanced meal! The sprouts really add a nice texture along with the arugula, but the pesto really brings together all the flavor. You'll just have to see for yourself, but his combo is absolute perfection!
Spice up your sushi Friday with our Vegan Tuna Sushi Bowl. This sushi bowl is perfectly filling and features plant-based tuna made with tomatoes and all of your favorite sushi toppings, including cucumber, avocado, and wasabi if desired! Can’t forget the spicy mayo to tie everything together, which we will be making from scratch. This recipe is not as simple as the others, but totally worth it for your taste buds!
