You guys know how I love smoothies. They manage to sneak in foods I don’t actually like to eat (i.e. kale, carrots, spinach) in a way that’s delicious (and nutritious!) And I know I’m committing a culinary sin by saying this but…I don’t actually like eating watermelon very much. I blame it on a childhood allergy to melons, though nowadays the allergy is gone. But I’ve found one way that I actually really do enjoy watermelon, and that’s in summer smoothie form! It pairs so nicely with other summery, refreshing ingredients, like mint and cucumbers. So today we’re doing just that!
I don’t like adding ice to my smoothies, partly because I don’t like the strain it puts on my blender and also because it just seems to water it down. I prefer to freeze my fruits and let those be the things that keep my smoothie cool and frothy. So in this watermelon smoothie, I like to cube and freeze the watermelon before hand! It doesn’t have to be frozen solid, just an hour or so, but it does wonders for the deliciousness of this smoothie.
Then we’ll just throw in our cucumber, some mint leaves, and honey (if you tend to like things sweet). Puree until smooth, pour into a travel cup, and go enjoy the summer with your refreshing watermelon smoothie!

This 5 ingredient wonder is a delicious and refreshing smoothie that is perfect for summer days! Cucumber and mint elevate it to the next level and honestly, I don’t think you will ever make a watermelon drink without them after this.
- Watermelon: This recipe starts with 4 cups of frozen seedless watermelon. Just be sure to chop and freeze beforehand. This is how the smoothie is cold and has great texture without ice!
- Cucumber: You can peel or not peel the cucumber, the world is your oyster!
- Mint: The mint makes this smoothie that much more refreshing (even more so than just the raw hydration of watermelon!). A few sprigs of fresh mint go a long way!
- Optional: Water and honey can be added as needed. You may need water to blend it or at least get the blender started. And, while watermelon is very sweet, a touch of honey can help amplify the sweetness.

Freezing watermelon is a great way to use the other half of the humungous watermelon. We have all been there, we get this delicious juicy watermelon, cut it all up, only to realize it is enough for a small army. So, freeze half of it and use it in smoothies and drinks!

Recipe Tips
Prep the watermelon and cucumbers: By cutting and freezing the watermelon and chopping the cucumber in advance, you can serve yourself and your guest’s refreshing smoothies with nearly no work.
Storage: I recommend only making enough smoothie for what you will drink that day. However, you can freeze this smoothie but it will result in more of a slushie consistency.

I found the flavour to be fairly bland without honey and I didn’t want it to be super sweet. I added lemon flavoured soda water and a few frozen raspberries, and then it was great.
