MONDAY: 20 Minute Taco Soup

Start the week off with this delicious and simple Taco Soup. Our award-winning taco soup features a ton of pantry staples, such as corn and several kinds of beans, and is fully customizable to your bean preferences. This filling soup comes together in under 20 minutes and tastes just like a taco, but with fewer carbs!
PREP TIP: The soup can be made in the slow cooker so it can cook all day while youโ€™re busy.
MEAL PREP TIP: This soup will last about one week in the fridge, but can be frozen in individual portions to enjoy at a later date!

These Soyrizo Tacos are stuffed with homemade vegan chorizo and quick pickled red cabbage, topped off with a smoky adobo crรจme.

TUESDAY: Soyrizo Tacos with Adobo Crรจme

Taco Tuesday never looked better with our Soyrizo Tacos with Adobo Creme! These are way more unique than โ€œnormalโ€ tacos because of the pickled red cabbage and smoky adobo creme. This makes it a tad bit more complicated to make but will be worth it in the end because of all of the flavors they bring in.
MAKE AHEAD TIP: Make the pickled red cabbage in advance, as it stores well in the fridge for up to two weeks and can be used for several other recipes!

WEDNESDAY: Vegan Burritos with Taco Meat and Queso

If you love burritos, youโ€™ll love these Vegan Burritos with Taco Meat and Queso. The tempeh taco meat, smoky queso cheese sauce, and chipotle cauliflower rice with the essential spices come together to bring the tastiest and most filling burritos youโ€™ve ever tried! The best part? These burritos are completely vegan!
MAKE AHEAD TIP: Make the taco meat and the cauliflower rice (youโ€™ll be needing more of the rice anyway) and chop the veggies (except the avocado) in advance so all you have to do is assemble the tacos!
