Meal Plan: A Week Of Asian Inspired Recipes

This vegetarian meal plan features 5 days of Asian-inspired recipes that highlight staple vegetarian Asian dishes, such as kimchi and curry!

Meal plans are so convenient, especially during busy weeks. Having a pre-made meal plan will save you so much time when it comes to trying to figure out what to make for supper every weeknight.

So this week, skip the Chinese takeout and prepare these delicious and healthy Asian-inspired vegetarian meals! It’s not difficult to make Asian meals vegetarian, or even vegan, as each dish is highly flavorful and heavy on the veggies. Most of these meals incorporate our favorite plant-based meat substitutes – tofu and tempeh.

These recipes feature dishes native to India, Korea, Thailand, and China. From soup to tacos and pizza, we’ve got you covered with all of these Asian-inspired meals for this week’s meal plan!

MONDAY: Mung Bean Soup

Recover from the overindulging weekend with a soup! This Mung Bean Soup is heavy on flavor and nutrients! Mung beans are little green beans that look like peas and are commonly found in many Asian and Indian dishes. 

These beans provide a crazy amount of protein, fiber, magnesium, iron, copper, and zinc. They're also high in antioxidants and beneficial to cholesterol, digestion, and blood sugar levels. This soup features different textures and flavors that are so complementary and absolutely delicious. All you’ll need is the mung beans (duh!), some broth, coconut milk, spices, and veggies!

MEAL PREP TIP: This recipe makes 6 servings, so you’ll definitely have enough for leftovers throughout the week. You can store this soup in an airtight container in the fridge for 5 to 7 days.

Kimchi Tempeh Tacos

Taco Tuesday never looked better with these Kimchi Tempeh Tacos! These tacos are made in 20 minutes or less and will leave you feeling satisfied.  Between the tempeh taco meat and the kimchi, these tacos are probably my favorite recipe - and I have tons of taco recipes on this site! 

MAKE-AHEAD TIP: You’ll have to reference our tempeh taco meat and kimchi recipes to make these tacos but we promise you this is completely worth it! Make those recipes a few days in advance, so all you’ll have to do is put the tacos together on taco night!

WEDNESDAY: Thai Vegetarian Coconut Curry

This Thai Vegetarian Coconut Curry dish is simple to make and also very filling and flavorful! Featuring a ton of veggies (including any you currently have in your fridge), this curry recipe is also healthy. We also throw in some tofu for that “meat” consistency found in most curry recipes. Prepare this curry with white rice or even our bonus Cauliflower Fried Rice recipe for even more flavors.

MEAL PREP TIP: This recipe makes 4 servings, so you can make enough to meal prep throughout the week. This is how I meal prep Thai curry. All you need to do is buy meal prep containers with several sections, so you can prevent everything from getting soggy by keeping the tofu separate from the sauce and rice.

THURSDAY: Sticky Orange Cauliflower

Indulge in our sticky Orange Cauliflower on this busy Thursday. It honestly tastes just like the delicious orange chicken you get when you order Chinese food and not like the boring cauliflower you are thinking of! All you need is cauliflower and panko and you’ll make an orange sauce to get these crispy pieces of orange “chicken.” This is another dish you can serve with our bonus Cauliflower Fried Rice recipe!

MEAL PREP TIP: This recipe serves 3, but make more to enjoy for the rest of the week if needed.

FRIDAY: Korean Pizza

Looking for a change on your pizza night? Try our Korean pizza, which contains BBQ pulled “pork.” kimchi, and a gochujang tomato sauce. I can put kimchi on anything, but putting it on this pizza gives it such a unique twist. The Gochujang chili pepper paste that goes into our pizza sauce gives it a sweet/spicy base.

MAKE AHEAD TIP: Make sure you make enough Kimchi for the entire week of these Asian-inspired recipes.

BONUS: How to Make Cauliflower Fried Rice

Our Cauliflower Fried Rice makes the most perfect side dish, or even main if you’re looking for a healthy, low-carb meal. This is such an easy-to-make recipe, filled with tons of veggies (nothing but veggies) - and tons of flavor!
