In honor or Cinco de Mayo coming up, today we’re going through some of my favorite vegetarian Mexican recipes! Because surprisingly, Mexican cuisine can be made sin carne pretty easily (you won’t even miss the meat).
These plant-based takes on Mexican recipes are all inspired by my experiences living and eating in San Antonio (as in, they’re probably closer to Tex Mex than to traditional Mexican cuisine), but they’re all great for serving on your Cinco de Mayo menu. Enjoy!
