The roasted grapes add an interesting texture to compliment the crispy yet soft sweet potato, as well as a sweet yet salty taste. If you’re not a bit sweet potato lover, you can try this same recipe with white potatoes. They’ll be just as deliciously cheesy and full of flavor!
MEAL PREP TIP: Make as many of these sweet potatoes as you want to have for meals throughout the week. Add toppings when ready to eat.
