MONDAY: Smashed Sweet Potatoes with Roasted Grapes

These smashed sweet potatoes with roasted grapes are a quick dinner favorite of mine! The roasted grapes add an interesting texture to compliment the crispy yet soft sweet potato, as well as a sweet yet salty taste. If youโ€™re not a bit sweet potato lover, you can try this same recipe with white potatoes. Theyโ€™ll be just as deliciously cheesy and full of flavor!
MEAL PREP TIP: Make as many of these sweet potatoes as you want to have for meals throughout the week. Add toppings when ready to eat.

TUESDAY: Blueberry Grilled Cheese

There's nothing more savory than our Blueberry Grilled Cheese. This innovative grilled cheese takes brings your standard grilled cheese up a notch with fresh berries, white cheese, goat cheese, and arugula. This grilled cheese is fully customizable; swap out the goat cheese and white cheese for your favorite kind and use strawberries instead of blueberries. Either way, the mix of slightly sweet and salty is absolutely scrumptious and we are sure you will fall in love with this grilled cheese!
MAKE AHEAD TIP: Halve the blueberries in advance so you can just put the sandwich together when you are ready to eat.
