You guys know I love hiding vegetables in my foods, smoothies specifically. Because it just feels so good when you realize it’s 9am and you’ve already had a few servings of veggies. And it feels even better when those servings of veggies are in the form of a sweet, decadent, chocolatey smoothie!

Introducing, the Red Velvet Beet Smoothie bowl! The beets, in combination with cocoa powder and banana, turn this smoothie into an antioxidant-packed smoothie bowl that has the rich creaminess of red velvet cake, but the heart-healthiness of beets. Serve it up to your health food-loving significant other this Valentine’s Day as a way of saying “I heart you!”.

This Red Velvet Beet Smoothie Bowl makes the perfect Valentine’s day breakfast, because not only is it made from the heart, but it’s great for your heart!

Ingredients

  • 1 roasted beet cooled
  • 1 cup frozen cherries
  • 1 banana chopped and frozen
  • ¼ cup milk any variety
  • 3 Tbsp cocoa powder
  • 1 Tbsp honey or maple syrup for vegan option

Instructions 

  • Combine all ingredients in a blender and blitz until smooth, adding more milk and honey as needed to reach a consistency and sweetness to your liking (it should be thicker than a smoothie you would drink).
  • Top with your favorite nuts/seeds, banana, cocoa. You can also cut fruit/beets into heart shapes and set those on top for maximum “aw” factor come Valentine’s Day.
