Zucchini Recipes

A cup of sliced zucchini has only 18 calories yet provides significant amounts of vitamin C, fiber, vitamin B6, potassium, and protein (yes protein). Zucchini is a versatile veggie that largely takes on the taste of other foods, making a wide variety of zucchini recipes possible. 

When buying, look for zucchini with slightly prickly but shiny skin. The skin should be firm and free of cuts and bruises. Store zucchini in a plastic bag in the refrigerator for 4-5 days. Do not wash until ready to use. Cooked zucchini can be stored in the refrigerator as well, but should be used within 2 days.
