Here’s what goes into snack boxes

  • Zucchini Cheddar Bites: Packed with hidden veggies and perfect for satisfying that savory tooth. Grab the cheddar bites recipe here!
  • Fruit: Strawberries, oranges/mandarines, and seedless red grapes are my favorites, but you can substitute them with what you enjoy.
  • Veggies: Celery sticks last for a very long time in the fridge, making them an ideal candidate for meal prep. I also love it with fresh edamame, carrots, or sliced bell pepper.

Here’s how to make the boxes

  1. Make the Zucchini Bites: Prepare these according to the directions. It’s just a mix-and-bake recipe that takes 15 minutes of hands-on work and 30 minutes to bake.
  2. Assemble: While the bites are baking, you can add everything else to the boxes. Then, pop the zucchini bites into the containers when they’ve cooled.

If you’re on the hunt for some more variations of snack boxes or bento boxes, try these other combinations.

  • Sweet and Savory: For this one, I’ll use raspberries paired with chocolate chips and nuts or crackers. Add some cheese and apple slices, and it’s a match made in heaven.
  • Breakfast On the Go: For this one, pack carrot lox, hard-boiled eggs, Greek yogurt tzatziki sauce or cream cheese, and a mini bagel.
  • Peanut Butter Protein Pack: I wasn’t sure what to call this one, but it’s one of my favorite healthy snacks, so it needed to be included. A half banana (with the peel still on to prevent browning), peanut butter, pretzel thins, and a bit of yogurt or cottage cheese.
