Easy vegetarian recipes, one ingredient at a time
You might be surprised to learn that despite pineapple’s notable sweetness, it is a lower calorie fruit than either apples or pears. One cup of pineapple chunks provides over 100% of your daily need for vitamin C and nearly as much manganese. We’re not really sure what the effects of manganese deficiency are, but let’s not risk it.
Choose pineapples heavy for their size with dark green leaves. Avoid soft or dark spots and dry-looking leaves. Eat as soon as possible after cutting, and refrigerate cut pineapple for 2-3 days.
