I’ve developed hundreds of popsicle recipes, and one thing I’ve learned is that if you’re going to make them at home, they should be incredibly easy, healthy, and delicious. These check all the boxes! You don’t even need a blender–just 4 ingredients and a spoon to stir!

Whenever I’m sick (and desperate), I get all sorts of odds and ends foods delivered that I would never otherwise eat, like electrolyte or Vitamin C rich popsicles.

But last time I was sick, I thought I’ve literally written a cookbook on popsicles, I know I can make these at home without much effort. Turns out, I already had everything on hand, and the rest is delicious history!

I know it’s a bold claim, but I had my nutritionist hat on for this one to develop a popsicle with all the great sick-fighting ingredients.

  • Powerhouse Ingredients: Pineapple packs in the vitamin C, apple cider vinegar is great for gut health, honey has been shown to be anti-inflammatory, and coconut water is hydrating!

here’s what you’ll need

You only need 4 ingredients for these, and they are all pantry staples. Jump down to the recipe card for exact measurements.

  • Crushed Pineapple: This version of pineapple is great because it’s already crushed enough so we don’t need to blend it, just mix. Just be sure to grab one packed in 100 percent juice.
  • Apple Cider Vinegar: You might think of this as being used for dressings, but there are actually a lot of sweet Bragg’s (my favorite brand) apple cider vinegar recipes. The slight sweetness pairs well with tropical fruits, making for a delicious, gut-healthy frozen snack.
  • Honey: Grab a local honey, which is usually ore flavorful and has pollen from your area (great if you’re an allergy sufferer like me).
  • Coconut Water: You could also use water or juice. We’re just using enough to help fill the molds here!

using whole or fresh pineapple

You certainly can use fresh pineapple, but when I’m sick, I sure don’t feel like cutting up a pineapple. For this reason, I opt for crushed canned. If you do use chunks or a whole pineapple, you’ll need to blend all the ingredients together.

filling up your molds

Popsicle molds all vary slightly in size. For this reason, it’s hard to get the liquid amount just right, so my biggest tip is to have a liquid you can easily add to top them off. For this recipe, it’s coconut water. Just be sure to leave some room at the top for expansion.

Change it up

You can easily add more fun ingredients to these popsicles to make them your own. Think of those little wellness shots in the grocery store. Any of those flavors will work well in these popsicles! Here’s some of my favorites:

  • Turmeric: Just stir it in to make pineapple turmeric apple cider vinegar popsicles.
  • Cayenne: For added heat and to clear out your sinuses!
  • Kid-Version: For a kid variation, use less apple cider vinegar and add more coconut water for hydrating coconut water treats.
  • Elderberry: Add in a few tablespoons of the syrup for an added antioxidant boost.

Ingredients 

  • 1 20-oz can crushed pineapple
  • ½ cup apple cider vinegar, I like the Bragg's Pineapple Turmeric flavor here
  • ¼ cup honey
  • coconut water, as needed

Instructions 

  • Stir together 1 20-oz can crushed pineapple (with its juice), ½ cup apple cider vinegar, and ¼ cup honey.

  • Freeze: Pour mixture into molds, leaving a little space at the top for them to expand. If the mixture doesn't fill the molds entirely, top off each well with coconut water and stir with a popsicle stick to combine. Insert sticks and freeze until hard (at least 4 hours).

  • Serve: Run the mold under warm water for a few seconds to loosen them up, then remove from the mold.

Notes

Storage: These will last for up to 3 months in the freezer. Just make sure the mold lid is sealed tightly to keep them from getting freezer-burned.
Can I use whole pineapple or chunks? Yes, you’ll just need to blend all the ingredients together.
