Half cup of cucumber provides a variety of vitamins and minerals for about 8 calories (and like so many fruits and vegetables much of the nutritional value is in the peel)!
There are a number of varieties with great names like Diva and Burpless, and some interesting looking varieties like Persian. Look for cucumbers without blemishes or soft spots, which can indicate they have started to rot. They should be dark green without any yellow spots.
Store cucumbers in the refrigerator if you are not going to use them right away. Do not freeze. Wrap unused cut cucumber in plastic wrap and store in the refrigerator, using them as soon as possible.
