You only need four ingredients

The key to making carrot juice that actually tastes good is adding a few flavorful friends, like fruit and ginger! (Jump to the recipe for exact measurements!)

  • Carrots: Any carrot will work here – baby, shredded, whole…whatever you have!
  • Mango: Fresh or frozen mango adds sweetness and a creamier texture to this juice.
  • Pineapple: You can use fresh or frozen.
  • Ginger: Fresh ginger is a great way to wake up your mornings and adds zing to this juice.

to peel or not to peel

You can leave the peel to make carrot juice. Just be sure to clean the carrots well first by scrubbing them under running water.

Ingredients 

  • 2 cups chopped carrots
  • 1 cup chopped mango, fresh or frozen
  • 1 cup chopped pineapple, fresh or canned
  • 1 tsp fresh grated ginger
  • 1 cup water, or pineapple juice from the can

Instructions 

  • Blend: Place all ingredients in a blender and blitz until smooth.
    Orange liquid in a blender.
  • Juice: You can go two routes to make this carrot juice smooth and silky.
    Option 1: For a juice-like consistency, pour mixture through a nut milk bag to strain out fibers. 
    Option 2: For a thicker consistency, add a splash more water or pineapple juice to the blender and blitz.
  • Serve: If your fruit was not cold to begin with, refrigerate the juice until chilled before serving, or serve over ice.

Notes

Storage: Juice can be stored in the fridge in an airtight container for up to 5 days. To enjoy again, simply give it a shake to mix it up any separated bits.
