Ounce for ounce, cauliflower has as much vitamin C as most orange juices without the sugar of the juice. When used as a rice or potato substitute cauliflower provides a markedly improved nutrition profile for about 1/5 the calories (check out our Mashed Cauliflower and Cauliflower Rice)!
There are several varieties of cauliflower to include Cheddar, Purple of Sicily, and my favorite Romanesco (the fun green one covered in small spirals). Choose cauliflower with compact, creamy white curds and bright green, firmly attached leaves. Avoid brown spots or lose sections that are spread out, and refrigerate in a bag for up to 5 days.
