Nutritional yeast is an underrated (and still somewhat secret) kitchen wonder. It can be so many things—cheesy deliciousness in savory dishes or a flavor depth creator in sweet recipes.
Seriously, nutritional yeast makes this vegan French toast possible (and totally delicious). It transforms the simple mixture of milk, sugar, and spices into a savory alternative to a traditionally egg-based dish.

- Dairy-Free Milk: Use plain or vanilla soy or almond milk (or whatever you have on hand). For an even tastier recipe, make your own almond milk or try my creamy 5-minute oat milk!
- Flour: Flour helps to thicken the “egg” mixture. We’ll just use all-purpose.
- Nutritional Yeast: The secret ingredient to this eggless French toast recipe! The best (and cheapest) place to find nutritional yeast is at bulk food stores. Otherwise, you can easily order this ingredient online.
- Flavor Makers: Brown sugar, ground cinnamon, vanilla extract, and salt help transform this humble mixture into a crave-worthy vegan breakfast. Feel free to use other spices like nutmeg, cardamom, or pumpkin spice!
- Bread: And, of course, the bread. Stale bread is best, but use whatever bread you have on hand. I like to use thick slabs of sourdough, but sturdy white sandwich bread or wheat bread works great.

Step 1: Coat The Bread
Once combined, dip your bread into the batter to coat both sides.

Fresh Isn’t Best!
Stale bread is best because it won’t become quite as mushy when you dip it in the batter (though I’ve used fresh bread with success as well).
Step 2: Cook The Bread
Then, simply sauté the dipped bread slices in a greased non-stick skillet until golden brown and slightly crispy!

Step 3: Serve Your Toast
Serve up this vegan French toast with a slab of margarine, maple syrup, and/or powdered sugar (along with fresh berries or any fruit you have on hand). Bon Appétit!

Recipe Tips
Use The Right Bread: This is arguably the most important ingredient! Aim for sturdy bread with a soft crust (egg-free challah or brioche bread are delish!). Steer clear of rustic loaves with thick, crunchy crusts or large holes.
Stir Between: To keep the flavors and nutritional yeast evenly dispersed, give the “egg” mixture a good whisk in between dipping bread slices.
Adjust the Heat: If you find your eggless French toast slices are burning on the outside before fully cooking on the inside, lower the heat slightly before adding the next batch.

Ingredients
- 1 cup vanilla soy or almond milk, 240 mL
- 2 Tbsp all-purpose flour
- 2 Tbsp nutritional yeast
- 2 Tbsp brown sugar
- 1 tsp cinnamon
- ½ tsp vanilla extract
- Pinch salt
- 6 slices bread, preferably stale
Instructions
- Coat: In a medium-sized bowl, mix milk, flour, nutritional yeast, sugar, cinnamon, vanilla, and salt. Dip each slice of bread into the mixture, flipping to ensure the entire slice is covered.

- Cook: Place a large skillet over medium heat and grease (with margarine or cooking spray). Cook each slice of toast for about 5 minutes, flipping to cook each side until brown and slightly crisp.

- Serve: Serve immediately, topped with syrup, powdered sugar, or fresh fruit.

This recipe is very quick and easy to prepare. I made it this morning for my husband and I and I have to tell you my husband is a picky eater and I was amazed that he said “this is really good” and didn’t ask questions as to what was in it. I added kale/spinach with strawberries on it and it was amazing.

Thank you for this recipe- I made it this morning and it was delicious!! I didn’t have any brown sugar so I used coconut palm sugar instead and it was perfect 🙂 My roommates who aren’t vegan loved it and said they didn’t even notice the missing egg and dairy. I’ll definitely be making this again!

This was the BEST French toast I’ve ever made!!! A few modifications, but I’ve found my new GO TO!! Almond flour, oat milk, Myokos vegan butter to cook and Ezekiel sprouted raisin bread. DELISH!! Thank you! Will never need eggs again!

I made this recipe this morning the only thing wrong with it is the milk needs to be a lil warm for the yeast to do its job correctly it was not stated in the recipe and people who have never used yeast wouldn’t know this
Hi Jessica! Nutritional yeast is different from baker’s yeast and doesn’t actually need to be warmed up to activate (you can even eat it dry, like on popcorn!) 😀

Excellent! Though a bit soggy. I topped mine with maple syrup and powdered sugar. Definitely a comfort food. Wish I had more bread, used multi grain.
