Your New Favorite Vegan Breakfast
Nutritional yeast is an underrated (and still somewhat secret) kitchen wonder. It can be so many things—cheesy deliciousness in savory dishes or a flavor depth creator in sweet recipes.
Seriously, nutritional yeast makes this vegan French toast possible (and totally delicious). It transforms the simple mixture of milk, sugar, and spices into a savory alternative to a traditionally egg-based dish.

“Wow we made this recipe this morning and I was floored at how good it was. I never cared for the ones using bananas and now I’m so happy to find such a delicious replacement without eggs.” —Caitlin

You Only Need 8 Ingredients
This is just an overview; jump to the recipe card for the full recipe!
- Dairy-Free Milk: Use plain or vanilla soy or almond milk (or whatever you have on hand). For an even tastier recipe, make your own almond milk or try my creamy 5-minute oat milk!
- Flour: Flour helps to thicken the “egg” mixture. We’ll just use all-purpose.
- Nutritional Yeast: The secret ingredient to this eggless French toast recipe! The best (and cheapest) place to find nutritional yeast is at bulk food stores. Otherwise, you can easily order this ingredient online.
- Flavor Makers: Brown sugar, ground cinnamon, vanilla extract, and salt help transform this humble mixture into a crave-worthy vegan breakfast. Feel free to use other spices like nutmeg, cardamom, or pumpkin spice!
- Bread: And, of course, the bread. Stale bread is best, but use whatever bread you have on hand. I like to use thick slabs of sourdough, but sturdy white sandwich bread or wheat bread works great.

Ready in 15 Minutes
Step 1: Coat The Bread
Once combined, dip your bread into the batter to coat both sides.

Fresh Isn’t Best!
Stale bread is best because it won’t become quite as mushy when you dip it in the batter (though I’ve used fresh bread with success as well).
Step 2: Cook The Bread
Then, simply sauté the dipped bread slices in a greased non-stick skillet until golden brown and slightly crispy!

Step 3: Serve Your Toast
Serve up this vegan French toast with a slab of margarine, maple syrup, and/or powdered sugar (along with fresh berries or any fruit you have on hand). Bon Appétit!

Recipe Tips
Use The Right Bread: This is arguably the most important ingredient! Aim for sturdy bread with a soft crust (egg-free challah or brioche bread are delish!). Steer clear of rustic loaves with thick, crunchy crusts or large holes.
Stir Between: To keep the flavors and nutritional yeast evenly dispersed, give the “egg” mixture a good whisk in between dipping bread slices.
Adjust the Heat: If you find your eggless French toast slices are burning on the outside before fully cooking on the inside, lower the heat slightly before adding the next batch.

Really lovely, and easy!
I added blueberries, sliced banana, and a small scoop of coconut ice cream. Great lazy-weekend breakfast 😀
Ooooh yum! Can’t go wrong with ice cream for breakfast 😉 Thanks for sharing and I’m so glad you liked it!
I would not recommend putting flour in this because my first was basically dough but overall it was really good 😌
I’ve love your version of this eggless french toast!!! I’ve typically seen eggless french toast made with banana so this is a refreshing spin that looks delicious! What a great way to use nutritional yeast!
Thanks Jessica!! The nutritional yeast really makes it so savory and hearty and mmmm 🙂
Wouldn’t using nutritional yeast give it a “cheezy” taste?
Nutritional yeast (like eggs) is actually pretty dynamic! It gives an eggy essence to this recipe, and paired with a bit of brown sugar + maple syrup is just what this vegan French toast needs 🙂
Yeah lil bit
soooooo happy to find a banana free version of vegan french toast (I’m mega allergic to bananas)
So happy I could help, Jeanine!! I’d love to hear how it goes if you try out the recipe 🙂
I used this recipe this morning and changed just a few minor details – it was SO good. I shared your original on my blog and then my changes. Thank you for sharing!
SO happy you liked it, Alyssa! It’s such a flexible recipe, happy you could make it your own 🙂
I replaced the all purpose flour with arrow root instead for a much more healthier choice, but other then that the family loved it!
Sounds tasty, Jaquis! So happy you all liked it! 😀
Hey Sarah!!! Sooooooooooo glad I found this recipe. I have never used “nutritional yeast” and cannot abide anything that even remotely tastes like egg. So, can I just use self-rising flour along with the vanilla almond milk, etc. and still achieve the same result???
Hi Jacquelin! The nutritional yeast is really just for flavor. If you’re not a fan of the flavor you can simply leave it out (though I may add a touch more salt in that case). Quite a forgiving recipe so don’t be afraid to experiment with flavors and spices! 😀
This was my first time making vegan French Toast and I have to say it was delicious! I was out of vanilla extract so I used orange extract(surprisingly good!) and I used about twice as much brown sugar and cinnamon. My non-vegan boyfriend highly approved!👌🏼♥️
I love your twist with the orange extract! Probably so bright and tasty. Glad they could also win over your non-vegan boyfriend 😀
How do I keep the inside from becoming mushy?
Hi Taylor! I haven’t had this happen before. Perhaps lower the heat so the inside can cook fully, then turn up the heat just at the end to toast the outsides 😀
Could the nutritional yeast be substituted for ground flax seed?
Hi Katy! The nutritional yeast is more for the flavor (eggy/creamy) than it is for the texture. I’m afraid flax seeds, while thickening up nicely, wouldn’t provide that same “eggy” flavor that we associate with French toast.
