These tofu marinades actually deliver flavor, crisp edges, and real payoff, not bland cubes pretending to be exciting. With 8 flavorful options, this is a fast, flexible, vegan-friendly way to prep protein for the entire week in about 15 minutes.

Tofu is a little sponge, soaking up whatever flavors you throw at it. No matter what flavor profile your dish is headed toward, nutritious tofu will slide right in.
I made this because tofu deserves better than being an afterthought. I wanted marinades that worked with different cooking methods, held up to heat, and tasted bold enough that you would happily eat the tofu on its own.

“Oh wow!!!! This is a great post thank you so much! I love tofu and I love to marinate then air fry it, and you just gave me so many great new options for changing up the taste! THANK YOU Sarah!” —Dina

Each flavor here was tested with sautéing, baking, grilling, or air frying in mind, so the sauces cling, caramelize, and season the tofu all the way through instead of sliding off.

Tofu Tip
Stick with firm or extra firm tofu when you’re adding it to these easy marinade ideas. Anything softer may fall apart when soaked in the flavors.

This marinade is also tasty with seitan or tempeh. Try mixing it into cauliflower fried rice for easy meal prep with fresh ingredients like in this Buddha bowl.

BBQ marinade couldn’t be easier. I thin out my favorite barbecue sauce and add some more flavor boosters, which are listed below. Pair it with a light summer vegetable salad or strawberry summer salad.

How to Cook Marinated Tofu
Tofu is really easy to cook! You can either just add it to a recipe where appropriate, or cook it on its own and then add to your plate or the rest of the dish (like saute, cool a bit, then top a salad).
- Baking: I like to line a pan with parchment while the oven heats to 400°F. I find it takes about 30 minutes for tofu to cook up crispy. You can flip each piece over halfway through if you have slabs or just jiggle the pan around if they are cubes. All the photos in this post have the tofu baked in this way!
- Saute: Heat up a pan over medium-high heat and add a touch of oil. Then add your tofu pieces and flip them as each side toasts so they don’t burn.
- Grill: As long as you oil your grill well, tofu slabs cook up nicely. Set a gas grill to 400°F and go for about 3 minutes per side or until just charred. (Grab our full guide to BBQ tofu here!)
- Air Fry: This amazing appliance lets the hot air circulate until every inch of your tofu is nice and crispy. I have got to say, this air fryer tofu might be my favorite method!
Recipe Tip
Freeze, then thaw your tofu before marinating it to create a firmer, chewier texture!

I love the sesame ginger marinade so much that I keep making it but I am going to try the others.
Thanks for cooking with me, can’t wait for you to try more!
Are these freezeable?
Yes!
Has anyone tried freezing? What would happen if I prepped the tofu and sat it in the marinade overnight and then put the whole thing in the freezer in the bag and then thawed in the marinade before cooking at a later date? I would think pressing out tofu liquid beforehand would be extra important with this method.
Do you use the marinade after cooking the tofu that you have baked, to make a sauce to go with it ?
Can’t wait to give these a try
Thank you for sharing
You definitely can and that’s a great idea! You could try mixing some of the leftover marinade with plain Greek yogurt or sour cream for a flavorful dip.
Do you need to refrigerate it while it is marinating, or leave the containersitting on the counter, in this case for up to six hours?
That’s a great question! I would keep it in the refrigerator for food safety.
Just prepped the Smoked Bacon, Sesame Ginger, and Garlic and Herb. I’m looking forward to tasting them and trying the others when I have the ingredients.
Thank you!
Great choices! Happy eating!!
Hi Sarah
I am from Sweden. I wonder how much is 1/2 cup
Thank you for the recepiest
Susanne
Hi Susanne! It depends, but for liquids 1/2 cup is about 120 mL 🙂 For foods, 1/2 cup is typically a small handful.
Can you freeze these?
Yes!
For freezing as food prep, is it better to marinate for a bit first? Or would they marinate enough while thawing?
Also, I usually boil my tofu instead of pressing it. I learned that tofu will suck up the flavors of the sauces better that way when I lived in Japan. Thoughts?
I find that it usually marinates enough while thawing! And I’ve heard that about boiling tofu. I haven’t personally tried it though!
I’ve never heard of boiling tofu…more details on this please!
