One cup of chopped kale provides more vitamin A, C and K than most multivitamin pills. Seriously, 634% of your daily need for vitamin K, 206% vitamin A, and 134% vitamin C. On top of that, it is a decent source of protein and fiber.
Choose dark colored kale bunches with small to medium leaves. Avoid brown or yellow leaves. Store kale in a plastic bag in the coldest part of the fridge for 3-5 days.
