This easy avocado guacamole recipe has a secret — there’s hidden spinach! Think the fresh homemade guacamole you know and love but with the addition of healthy, vitamin-packed, vibrant green spinach for an ultra-flavorful combination! Best of all, it’s ready in just 10 minutes.

If you have a hard time getting your daily veggies in, then this guacamole is for you! I’ve also been known to hide vegetables in avocado pies, kale pasta sauces, and black bean brownies. You could call it a hobby.
But with this recipe, I discovered the added vegetables also keep the guacamole green! So instead of the dip turning brown quickly, it stays vibrant and tasty long after serving it. It’s a foodie scientist’s dream!

Here’s what you’ll need
This easy guacamole is the ultimate avocado recipe, requiring just a handful of easy-to-find ingredients! Jump down to the recipe card for exact measurements.
- Avocados: For this healthy guacamole, you’ll need 3 ripe avocados. Avocados are healthy in themselves, but we’re amplifying them even more!
- Spinach: The secret ingredient! Spinach keeps guacamole bright green without changing the taste or texture.
- Red onion: Diced finely to add a little crunch and zing. Shallots will work, too.
- Jalapeno: You can add more or less, depending on your spicy threshold. Be sure to deseed it.
- Lime juice: Use fresh lime juice instead of bottled. The difference will shine through in this recipe! (Plus, it helps keep the guacamole from turning brown.)
- Garlic: Do we ever need a reason for garlic?
- Salt and pepper: Throw in a pinch at the end to taste.
- Optional: If you’re a fan of tomatoes and/or cilantro, you can throw those in too!

avocado tips
New to the world of avocados? Here’s how to cut avocados easily, and for leftovers, here’s how to freeze avocados!

How to make guacamole dip
Most guacamole recipes have you simply mash everything together into chunky avocado bliss. We’re adding one more step to the mix in order to disguise our sneaky spinach…blending! This is an overview of the recipe. Jump to the recipe card for the full printable recipe.
- Blend: Combine the spinach, avocado, and lime juice until a puree forms.
- Mix: The trick to giving this guacamole great texture is to mix in your chopped ingredients last!

Keep the guacamole green
The spinach in this guacamole will help keep it green for longer than traditional guacamole. Here are a few ways to keep it green for even longer than that:
- Water: Pour a little lukewarm water over the guacamole before storing in the fridge. Similarly to the plastic wrap trick, this will help keep air off of the guac.
- Plastic wrap: Press plastic wrap directly onto the guacamole so that there is no air between the guacamole and the plastic.
- Lime juice: When guacamole turns brown it oxidizes, giving it a drab brown color. Lime juice is full of antioxidants, and a quick drizzle of lime juice will fight against browning!
storage
With the right storage, guacamole can keep in the fridge for 3 to 4 days. Store in an airtight container in the fridge using the methods listed above. The top of the guacamole may turn brown, but this can be scraped off to reveal the green and gold guacamole below!

make it a fiesta!
Guacamole is great when served as a chip dip or as a component in another vegetarian recipe. Here are some of our favorites!
- Vegetable Fajitas are only made better with guac!
- Avocado Toast made with this easy guacamole would be delish (add corn or radishes for some crunch!).
- Tempeh Tacos topped with this guac = dinner of champions.
- Chickpea Veggie Fajitas aren’t complete without a dollop of this guac.

How To Make Healthy Guacamole Dip (Never Turns Brown!)

- ¼ cup finely chopped red onion, about 1/4 onion
- 1 jalapeno, deseeded and finely chopped
- 1 clove garlic, minced
- Salt and pepper, to taste
- Optional: ½ cup chopped tomato, 2 Tbsp cilantro
Instructions
- Blend: With a handheld immersion blender or a food processor, blend spinach, 1 of the avocados, and lime juice until a smooth puree is formed, scraping down the sides to get everything mixed nicely.

- Mix: Chop the remaining avocado into small chunks, then roughly mash into the puree, along with the onion, jalapeno, and garlic. Once you reach a consistency to your liking, season with salt and pepper. Optionally stir in tomatoes and cilantro.

YAY! So happy to hear it! 😀
Great useful tips ! Thanks!!
Would it alter the taste to use lemon instead of lime?
Limes are slightly sharper and lemons can be a little sweeter, but they will work!
Delicious! Sharing recipe with my Mom!
