Chips are an essential snacking food because they hit on my two favorite food groups: salties and crunchies. But did you know you can make chips with spinach?

No, not blending and mixing them with flour…just by baking the spinach leaves (similar to kale chips)!

Betcha can’t Eat Just One

  • They’re made in the oven, so you don’t need any out of the ordinary gear to make spinach chips.
  • Low in carbs and calories, spinach chips retain much of the same nutritional benefits of raw spinach (thanks to a low cooking temperature).
  • They are SO easy to make. Like…really easy!

You’ll need Three things

If you’re looking for a low-carb chip recipe with un-fussy ingredients, then this is it! For the full quantities, jump to the recipe card.

  • Spinach: I prefer to use baby spinach leaves because they are perfectly bite-sized, but any type of spinach will work.
  • Seasoning: Just a little salt and pepper work great here!
  • Oil: I use olive oil, but avocado oil will work to encourage crisping.

Spice up your life

Veggie chips are great because you can customize the spices to anything you enjoy! Use lemon pepper seasoning for a burst of citrus or seasoned salt for a classic fry flavor.

The process looks like this

I don’t think I need to hold your hand making these chips because of how simple they are. (I might have to hold your hand back from digging into these crispy snacks before they cool, though!). Jump to the recipe card for the full instructions.

  1. Toss together the spinach with oil.
  2. Bake on a parchment paper lined cooking sheet low and slow.
  3. Sprinkle with salt and pepper just before serving.

Ensuring the leaves don’t overlap each other leaves plenty of room for the moisture to escape the leaves, making them ultra crispy!

Why It Works (Hint: It’s Not Magic)

  • Bake, don’t air fry: I know I love my air fryer just as much as the next person. But spinach leaves are so light they just fly up when hot air is shooting from every which way.
  • Season after baking: Because they need to bake low and slow, the salt and pepper tend to lose their flavor. I found it best to season just before serving, similar to seasoned fries.
  • Don’t drench the leaves in oil: This leads to soggy chips. We want the leaves just barely coated in oil so they will have a nice crunch and slight golden color.

Crispy Baked Spinach Chips

Ingredients 

  • 2 cups spinach
  • ¼ tsp olive oil
  • pinch salt and pepper

Instructions 

  • Mix: In a large bowl gently toss together spinach and olive oil to ensure each leaf is very lightly coated.

  • Bake: Preheat oven to 200°F (93°C). Arrange spinach leaves on a parchment-lined baking sheet, ensuring they're all laid out flat in a single layer and none overlap. Bake for about 1 hour, or until dry and crispy.

Notes

Storage: These can be stored in a paper bag or loosely covered bowl at room temperature for a few days, but will lose their crispy texture over time. They absolutely must be cool before storing; otherwise, any moisture will cause them to wilt.
Season simply with salt and pepper, or try one of the recipes from our popcorn seasoning ideas, adding the extra seasonings after cooking.
How do I prevent the spinach chips from getting soggy? Two things – make sure they are completely dry before baking. And bake for a full hour to really dry them out, almost dehydrating them.
Can I air fry these? This recipe has not been tested with the air fryer. If you want to try them in your air fryer, follow the cooking temp and times listed in our Air Fryer Kale Chips!

    I just made these! Sprayed with olive oil (used an oil sprayer for even coat) then tossed them in a home made bbq seasoning (stevia,paprika, dried garlic and dried onion, salt, pepper) when they were done. Holy Cannoli! These are now going to be my everyday snack. I polished off a whole bag of spinach in 5 mins! Thank you for sharing. Yuuuuum!
