It can be hard to explain the taste if you have never had passion fruit. They are sweet and tart (totally logical, lol) with large black seeds. The most commonly known purple ones originate from South America and, therefore, can be hard to find in North America unless you’re lucky enough to live in California or Hawaii. Thankfully, many retailers now sell frozen puree, a select few sell the fruit, and you can easily find fresh passion fruit online (which is what I did!).

Enough about passion fruit. Okay, these popsicles! Take that amazing fruit I just told you about and mix it with sugar, water, and lime juice. Pour into molds and enjoy delicious popsicles all summer (they keep for three months in the freezer, so yes—all summer)!

Here’s What you’ll need

With only 4 ingredients, these tropical popsicles are an extremely delicious and simple dessert. Just gather your ingredients and “Bend and Snap!”. Not really, but I think the popsicle equivalent is Mix and Pour!

  • Water: Water makes up 60% of your body and 60.5% when you eat this popsicle.
  • Sugar: While passion fruit is pretty sweet, it is also tart, so a little sugar is needed to help balance that tang.
  • Passion Fruit Puree: You can make your own passion fruit puree or find it in the freezer section of stores like Target and Whole Foods! But if you use frozen, be sure to thaw it before making these popsicles.
  • Lime Juice: I know I said passion fruit is tart, but lime juice is like vanilla for baking. It enhances the natural flavor of passion fruit while only adding a hint of lime flavor.
  • Passion Fruit Pulp (optional): I like adding some of the passion fruit pulp, with the seeds, to these popsicles. Not for more passion fruit flavor (these already have tons of that), but for looks because I like things that look fun and delicious.

When picking out ripe passion fruit, look for the wrinkly ones that are darker in color. When the skin is wrinkly, it means the skin has weakened because all of its energy is going to the ripe, sweet inside.

How to make Passion Fruit Popsicles

Step 1: Dissolve the Sugar
Heat 1 cup of water in the microwave until warm, then stir in the sugar until dissolved. This “simple syrup” will give these popsicles the perfect texture while adding some much-needed sweetness.

Step 2: Mix It
In a spouted bowl, combine sugar water with the remaining 1 cup of water, passion fruit puree, and lime juice. If you are making your own puree, scoop out the filling from the passion fruits and add it to a strainer situated over a spouted bowl.

Use the back of a spoon to squish the juice through the filter, separating the pulp and seeds from the juice. If using frozen puree, be sure to thaw it before making these.

Step 3: Assemble Them
If desired, spoon some of the pulp from a fresh passion fruit into each popsicle mold (this is just so you can have some seeds in the pops for the aesthetic!). Pour the mixture into molds, leaving a little space at the top for them to expand. Insert sticks and freeze until hard (at least 4 hours).

Step 4: Serve Them
Run the mold under warm water for a few seconds to loosen it up, then remove it from the mold.

Popsicle Variations

Want these creamy or more tropical? Try out these other yummy ways to mix up the popsicles.

  • Tropical: To add even more fun flavor to these popsicles, try blending in mango or pineapple with the passion fruit puree to make tropical popsicles (or try any of these tropical fruits).
  • Creamy: To make this a passion fruit creamsicle, mix in 1/2 cup coconut milk before pouring the mixture into the molds.
  • Spice It Up: Sprinkle tajin on the finished pops (like we do in these Mexican Paletas!).
  • Make It A Cocktail: Use these tropical popsicles as cocktail stirrers! They chill your drinks while slowly adding flavor, perfect for leveling up your summer parties!

  • 2 cups water, divided, 473 mL
  • ½ cup sugar, 100 g
  • 1 cup passion fruit puree, if using packaged frozen puree, thaw it before using, 230 g
  • 2 Tbsp lime juice, 30 mL
  • Optional: fresh passion fruit pulp

Notes
