Ah, the beloved sweet potato, our vitamin A packed potato friend! When buying sweet potatoes, look for small to medium sweet potatoes. The larger ones tend to be starchier. The skin should be firm, smooth, and even-toned. What’s more, a deeper color generally indicates it is richer in the antioxidant beta-carotene. 

Store at room temperature for about a week. For longer preservation, you need a cool (55F), dry, dark location. Under such conditions, they can easily last 4 weeks. Do not refrigerate raw sweet potatoes. Also, don’t worry that you could overdose on vitamin A eating too much of your favorite sweet potato recipe. This only happens with animal-based forms of vitamin A.
