You know what veggie (or technically, root) is kind of overlooked, especially in terms of its versatility? Sweet potatoes!

Sure, we all know they’re great, but when is the last time you used one in your cooking? For me, I have to make an honest effort to use them, and it’s usually just to make fries or throw into my salads.

But they’re good for so much more than just fries and salads and can be transformed to fit into almost any type of recipe… even smoothies and baked goods!

In an attempt to give the good old sweet potato the attention it deserves, I compiled this round up to supply you with all of the sweet potato cookin’ ideas you could imagine.

Without further ado, here are 13 easy ways to cook with sweet potato!

You've heard of regular potato gnocchi, lobster gnocchi, squash gnocchi, and maybe even tomato gnocchi. But have you ever tried Sweet Potato Gnocchi?
