17 Easy Vegetarian Dinner Recipes
We just wrapped up or third year of blogging here at Live Eat Learn! (Approximately 11 internet years). Which means I’ve had the chance to share some of my most favorite vegetarian dinner recipes with you (while also coming up with some that I never would have imagined without you for inspiration!)
If you’re anything like me, weeknight dinners can be a struggle. For some it’s relaxing and meditative to cook after a long day of bustling. For others, it’s another chore. As someone falling squarely in the middle, I appreciate a wholesome dinner that’s also way easy to make. Which is why today I’m sharing a few of my favorite easy vegetarian dinner recipes with you!
Under 30 minutes:
“So, I made these for dinner tonight and …Wow!…they are fantastic. So easy. So filling. So healthy. I will definitely be making these again. Thanks for such a unique and delicious dinner!”
Under 20 minutes: “I made this this morning . Easy and very tasty . I will definitely make it again. Thanks”
Under 30 minutes: Craving something fresh and delicious (with a little “wow factor” thrown in)? These Vegan Rainbow Spring Rolls are as tasty as they are colorful (and are served with the BEST almond butter dipping sauce).
Under 15 minutes: These Soyrizo Tacos are stuffed with homemade vegan chorizo and quick pickled red cabbage, topped off with a smoky adobo crème.
Under 30 minutes: “Made the General Tso’s Cauliflower from the Live Eat Learn site! Super yummy!”
Under 30 minutes: “I’m all about sushi bowls! So easy, yet totally delicious. The flavour without the hard work, right?!”

Under 30 minutes: Healthy Cauliflower Soup that’s ultra-creamy AND super simple AND vegan? It’s happening and it is so much tastier that you can imagine.
Under 30 minutes: “I love roasted chickpeas and I love avocados, but I have never put them together. That is genius!”
Under 30 minutes: It’s like chicken noodle soup (except the chicken is chickpeas) (and noodles are quinoa) (and okay maybe it’s pretty different but it’s so tasty and easy to make!)
Under 30 minutes: No need to go furniture shopping to have a taste of Sweden. These meatballs are a healthy combination of quinoa and cauliflower, smothered in simple cream sauce and served atop fluffy mashed cauliflower!
