Carrot Recipes

One medium carrot provides over 200% of your daily needs of  vitamin A, but don’t worry about the potential for vitamin A overdose you may have read about. This is nearly impossible with plant-based vitamin A sources! 

Choose well-shaped, smooth, firm, crisp carrots with deep color and fresh green tops. Avoid soft, wilted, or split carrots, and refrigerate them in a plastic bag with tops removed for up to 2 weeks.
