½cucumberpeeled or unpeeled*
2sprigs of mint
wateras needed
honeyas needed
Instructions
Blend: Add watermelon, cucumber, and mint leaves to a blender. Blend until smooth, adding water as needed to get things moving. Taste and add honey as needed to suit your liking.

To peel or not to peel the cucumber? Peeling it gives the smoothie a more vibrant red color. Leaving the peel on does make it a bit browner but provides more health benefits from the peel (like fiber!).To freeze watermelon, lay chopped pieces on a parchment paper-lined sheet in a single layer. Freeze until hard, then transfer to a freezer-safe container or baggie until you need them.Storage: I recommend only making enough for what you will drink that day, as the mixture doesn't store well once blended.
