Hands down, the best meal of the box. This was so easy it almost felt illegal. Sautéed zucchini, creamy dairy-free tzatziki, crisp flatbread, and that final hit of fresh lemon zest? Bright, salty, creamy, crispy…textbook flavor balance. This is one of those “I would make this even if I had to shop for it myself” recipes.


Paneer Tikka Masala with Naan
15 minutes • 870 calories • 2 servings
Another favorite. Paneer gets beautifully golden, the sauce is rich without being heavy, and the sautéed spinach might be my favorite sneaky veggie side of the week. love paneer, and this was a great reminder to use it more often in everyday vegetarian cooking. Not just restaurant-style meals.


Grilled Zucchini + Avocado Tacos
8 minutes • 460 calories • 2 servings
Total family favorite, and I was genuinely surprised by how well the avocado charred in a grill pan on the stove. The combo of smoky zucchini, creamy avocado, and chimichurri is simple but very effective.


Chick’n Fajita 5-Layer Protein Bowls
9 minutes • 500 calories • 2 servings
These were solid and filling, with great protein balance. The only tweak I’d make next time? A creamy drizzle (tahini, sour cream, or yogurt would be perfect). That said, everything came together quickly and tasted good—no complaints for a sub-10-minute dinner!


Lemon Garlic “Beef” Glow Bowl

This one was fun. I’d been seeing lemony “glow bowls” all over social media, and I loved that Hungryroot had a vegetarian version ready to go. The plant-based “beef” was savory and satisfying, and the lemon-garlic flavor kept everything tasting bright instead of heavy.
