We’ve all been there. You’re rushing in the morning but need something quick to take on the go. Smoothies are great for this, and jackfruit smoothies are even better: they’re basically like drinking sunshine since they’re packed with so much vitamin C.

You might be familiar with using jackfruit as a vegan pulled pork alternative (jackfruit carnitas, anyone?). That’s because the texture is fibrous, like pineapple, and when cooked, many say it has a meaty taste. However, when eaten raw, jackfruit is very fruity and sweet, kind of like bananas, pineapples, and mango all at once! This 3-ingredient recipe makes the perfect base for a variety of smoothie variations, so you’ll never be bored!

You don’t need much

  • Jackfruit: Check your local Asian grocery store for this huge, bumpy fruit! Many stores sell fresh jackfruit, and you should definitely use that in this smoothie. The canned versions are cooked and will have that meaty flavor.
  • Lime Juice: Make sure to grab a couple of limes as well. Fresh citrus juice is best and helps to cut through the thick sweetness of the jackfruit.
  • Light Coconut Milk: This will be your liquid to get the fibrous fruit to blend.

Which Coconut Milk?

Are you wondering what the best coconut milk to use is? I used canned light coconut milk here. This product has a higher water content and lower fat content than full-fat coconut milk (which is the can with a layer of delicious cream on top).

If you have time, freeze the jackfruit. Frozen fruit will give the smoothie a milkshake-like texture. If you can’t freeze it, add a handful of ice.

Let’s make it!

The most time-consuming part is getting the flesh from the fruit! With such a large fruit, it can be daunting to break down. So, if you aren’t sure how to cut jackfruit, here’s how!

Then just add all ingredients to your high-powered blender jar and go! Some blenders have a smoothie button, and others are controlled manually. Start the blender on a low setting and then ramp up as the fruit starts to break down.

Variations

The great thing about smoothie recipes is how adjustable they are!

  • Jackfruit Smoothie Bowl: Use ice to thicken and then top with fruit or granola.
  • Jackfruit Mango Smoothie: Add more tropical fun by throwing in a ripe mango.
  • Jackfruit Banana Smoothie: Add a frozen banana for extra creaminess.
  • Jackfruit Green Smoothie: Add a handful of spinach or kale for a Superman punch.
  • Protein Smoothie: Add a little protein boost to this jackfruit milkshake by replacing the some of the coconut milk with Greek yogurt.

Ingredients 

  • 3 cups ripe jackfruit, about 200 g
  • 1 cup light coconut milk, from a can, 236 mL
  • 2 to 4 Tbsp lime juice, 30 to 60 mL
  • Optional: Ice

Instructions 

  • Blend: Blend all ingredients in a blender until smooth. Optionally add a handful of ice to make the smoothie cold and frosty!

Notes

Can I use canned jackfruit? You can use jackfruit packed in water or syrup. It’s sweeter than the options canned with brine.
Storage: If you have leftovers, you can store the smoothie in the fridge for up to 3 days. Just reblend it with ice when ready to enjoy again.
Freezer: You can also freeze any leftover smoothie in an ice cube mold. Then reblend it with a bit of liquid when you’re ready to enjoy it again.

    Hi Sarah,
    I must say I’m not the biggest fan of limes, but I get their use here!
    I’m not unfamiliar with coconut milk, and I believe most of us are now getting more and more familiar with it.
    Jack-fruit, however, I’m really not familiar with it: never tried, have no idea about the taste.
    This recipe is so simple, I’m more than tempted to try it as soon as the occasion presents itself!
