Traditionally, an Aperol Spritz is made with Aperol, Prosecco, and a splash of soda water (similar to our Aperol Spritz popsicles!). But today, we’re putting a wintry spin on the classic by making cranberry Aperol Spritz cocktails.

You can whip them up in no time (thanks to pre-made ice cubes filled with orange slices, cranberries, cinnamon sticks, star anise, and rosemary sprigs). This extra little step means less time fussing over drinks and more time mingling with your guests (win-win)!

Here’s What You’ll Need

Great news! You only need a few easy-to-find produce and pantry staples to create this wintry masterpiece. (This is just an overview – jump to the recipe for exact measurements!)

  • Ice Cube Flavorings: We’ll use fresh Navel orange slices, cranberries (fresh or frozen), whole star anise, cinnamon sticks, and rosemary sprigs to add a sweet, spicy, tart, citrusy flavor and pop of color.
  • Cranberry Juice: Instead of the usual soda water, we’ll substitute cranberry juice for the ice cube liquid. It keeps the drink from becoming diluted (while adding an extra festive vibe!).
  • Aperol: You quite literally cannot have an Aperol Spritz without this classic Italian aperitif. With its signature bittersweet, slightly citrusy flavor, Aperol complements cranberry juice and gives the spritz a gorgeous orange hue.
  • Prosecco: Prosecco brings the bubbles! For the perfect balance between sweetness and crispness, look for a dry or extra-dry Prosecco.

Make It Sweeter

Aperol is definitely on the bitter side. If you’re not a fan of the bitterness, try using a bit less Aperol and adding a splash of soda water, extra cranberry juice, simple syrup, or a sweeter Prosecco to balance the flavors!

These Cocktails Are A Breeze To Prep

  1. Assemble the ice cubes with all the mix-ins at the bottom, then pour cranberry juice into each well.
  2. Freeze the assembled cubes until solid.
  3. Serve your Aperol cocktails with a cranberry ice cube, topped with equal parts Aperol and Prosecco.

Pour the cranberry juice into the ice cube tray slowly to prevent the garnishes from clumping together and turning into a hot mess. And to ensure the cubes hold up when you add the Aperol and Prosecco, let them freeze for at least 4 hours (or even better, overnight)!

  • orange slices
  • cranberries
  • star anise

  • 2 cups cranberry juice

Aperol Spritz

  • 1 part Aperol
  • 1 part Prosecco

Instructions 

  • Assemble: Arrange orange slices and cranberries into the bottom of each ice cube well (this is the ice cube tray I used), then add in star anise, cinnamon sticks, and rosemary.
    Once you have them looking how you like, pour cranberry juice into each well, almost (but not quite) to the top.
  • Freeze until solid, about 4 hours.
  • Serve: Place 1 large cranberry ice cube (or about 3 smaller cubes) into a serving glass. Top with equal parts Aperol and prosecco.

Notes

If you don’t have Aperol, you can substitute it with another bitter orange liqueur, like Campari. The flavor will be slightly different, but it’ll still taste delicious!
The ice cubes can last in the freezer for up to 2 months in an airtight container.

    So pretty! We’re not huge aperol fans, but these are versatile. I made half the cubes just as you described using cranberry juice, and served in vodka sodas. I made the other half with water instead of juice, and served with whiskey. They were a huge hit with everyone and just perfect for the holidays! Making again for NYE. Thank you!

    I made these for a family gathering at Thanksgiving, minus the anise. They were fun, festive, and enjoyed by all! In July, we have a cabin crawl in the canyon and we don’t see each other at the holidays, so I’m going to serve them to 25 or so people as they come by our place. I imagine it will be different from what everyone else serves! I like Kristen’s idea of whiskey, so I will probably make some of those. We will have to try it ahead of time, of course!
