Feta is one of those ingredients that has a secret double life. It most often plays the role of a refreshingly tangy Mediterranean cheese to be paired with savory things, but deep down feta is a wild child. It can be baked and paired with sweet and sour jams for the most addictive appetizer ever. Or whipped into a spread. Or crumbled into a salsa.

So in the name of letting feta shake its tail feathers, today we’re taking it where no feta has gone before… ice cream!

Frozen yogurt, to be exact. This dessert feta has just three ingredients and doesn’t require any fancy equipment.

You’ll essentially blend together your yogurt, feta, and honey, then pour it in a pan and freeze. Once frozen, break into chunks and blitz in the blender, adding a touch of milk or water to get things moving, until you get a creamy, sweet-yet-tangy frozen yogurt!

This Feta Frozen Yogurt has just three simple ingredients: feta cheese, plain Greek yogurt, and homegrown honey!

Ingredients 

  • 1 cup plain Greek yogurt, 200 g
  • ½ cup feta cheese, 50 g
  • 1 Tbsp honey, 15 mL

Instructions 

  • Freeze: In a food processor or blender, combine all ingredients until smooth. Pour into a wide dish (it shouldn’t be a very thick layer) and freeze until solid.
  • Blend: Break frozen mixture into chunks and add back into your blender, along with a few tablespoons of water or milk. Blitz until smooth and creamy, scraping down the sides as needed to get everything blended. Serve drizzled with honey.

    This sounds lovely. Someone gave me a 2 lb block of feta cheese that I still haven’t opened because – what to do with 2 lbs of feta when you live alone and you’re in social isolation?

    I’ve been looking for some desert recipes and I found a couple of Elaborate cheesecakes with ingredients I don’t have on hand and a couple of others using phyllo- also not on hand.
    This sounds perfect- plus variations come to mind- a little lemon zest maybe or candied orange peel.
    I wish I had those old fashioned aluminum ice cube trays for freezing.

    Oh! A flavored Vodka might keep it softer. Not that I have that either. Lol!
    Anyway! Thank you. Definitely trying that today.
