When you look in the fridge and think you have nothing to eat, Caesar beans have your back! This recipe was developed out of necessity when all I had on hand were canned beans and salad dressing to work with.

While that first rendition was yummy and kept me fueled, I’ve made some simple yet effective upgrades for an easy and supremely delicious recipe! Enjoy them on toast (beans on toast are the best!!) or just eat them up—we’ve included lots of ways to eat them at the bottom of the post!

Here’s What You’ll Need

  • Extra Virgin Olive Oil: This enhances the creaminess and contributes to the overall taste profile.
  • Mayonnaise: This key ingredient helps bind the flavors together by providing creaminess. Use vegan mayo as needed.
  • Dijon Mustard: Because of all the spices already in this mustard, it’s my favorite trick for bringing a lot of flavor with just one ingredient.
  • Lemon Juice: Fresh is best! This is a staple of any great Caesar dressing because it adds that acidity to cut through the richness of the other ingredients.
  • Garlic: What dressing doesn’t need garlic?! Again, fresh is best!
  • White Beans (Cannellini or Great Northern): These beans are quite large, which helps with the mouth feel if you get icked out by beans. They are also on the softer side, so stir carefully.
  • Fresh Grated Parmesan: Using freshly grated parmesan ensures a better flavor compared to pre-grated options (strict vegetarians should look for parmesan that is labelled “vegetarian”). Vegan parmesan can be used as needed.
  • Ground Black Pepper: Brings a subtle kick and complements the creaminess of the beans and dressing.

Vegetarian Caesar?

You may have noticed there’s one ingredient missing from the Caesar dressing…anchovies! To make this Caesar dressing vegetarian, we’re omitting the anchovies and adding that same depth of flavor with mustard and mayonnaise. How to make Caesar Beans

Step 1: Making the Caesar Dressing
Blitz the Caesar ingredients together until they are combined.

Be cautious not to over-blend, as excessive blending can cause the dressing to separate.

Step 2: Preparing the Beans
Open and drain a can of white beans (like Cannellini or Great Northern beans). Gently stir the beans, parmesan, and pepper into the Caesar dressing, ensuring they’re well coated.

Step 3: Assemble the Dish
Spoon the zesty Caesar beans over the toasted bread (I love sourdough!) and serve.

Briefly place the prepared toast under the oven broiler. This will lightly toast the top, melting the cheese and providing an irresistible melt-in-your-mouth experience.

Serving Ideas

I don’t know whether to call this beans on toast breakfast, lunch, or dinner! So here are a few serving ideas for it:

  • Meal Prep It: Prep the beans in advance and spoon onto toast when you’re ready to serve it.
  • Take It Camping: Throw the prepared Caesar beans in your cooler and toast the sourdough over the fire.
  • Make It For Brunch: Beans on toast + mimosas = a match made in heaven.
  • Make It For Girl Dinner: You know, dinner that’s so easy it might as well not be dinner (but so filling that it kind of is?).
  • Add it to a wrap: It’s so tasty in these chickpea Caesar wraps to add a little extra protein!

Ingredients 

  • 2 Tbsp extra virgin olive oil, 30 mL
  • 2 Tbsp mayonnaise, 30 g
  • 2 Tbsp dijon mustard, 30 g
  • 1 Tbsp lemon juice, 15 mL
  • 2 cloves garlic, minced
  • 1 15-oz can white beans, like Cannellini or Great Northern beans, 425 g
  • ½ cup fresh grated parmesan, avoid pre-grated parmesan, 40 g
  • ¼ tsp ground black pepper
  • To serve: 4 slices sourdough , can sub gluten-free

Instructions 

  • Caesar: Add oil, mayo, mustard, lemon juice, and garlic to a blender. Blitz just until combined – do not over blend, which can cause the sauce to break.

  • Beans: Drain and rinse beans. Stir in the Caesar dressing, parmesan, and black pepper.

  • Serve: Toast slices of sourdough and spoon Caesar beans on top. Serve immediately.

  • Optional Level Up: You can optionally place the prepared toast under the oven broiler very briefly to toast the top and make the cheese melty!

Notes

Can I make the Caesar dressing in advance?
Yes, you can prepare the Caesar dressing ahead of time and store it in an airtight container in the refrigerator for up to 3-4 days. Just stir it well before using it in the recipe.
Can I use a different type of beans in this recipe?
Absolutely! While the recipe recommends cannellini or Great Northern beans for their creamy texture, you can experiment with other types of beans like navy beans or butter beans.
Why is fresh grated cheese better than pre-grated?
Using freshly grated cheese instead of pre-grated cheese brings a noticeable difference to the flavor and texture of dishes. Pre-grated cheese often contains additives like anti-caking agents to prevent clumping, which can affect the taste and meltability of the cheese. Additionally, pre-grated cheese tends to have a drier texture, making it less rich and creamy.

    I toasted the bread first and broiled for 1 minute after beans were piled on top. Crunchy, melty, creamy deliciousness and so easy. I have the dressing ingredients hanging on my refrigerator for salad, other beans, and veggies.

    Thank you Sarah for another winning recipe! I am not a super-fast cook but I was able to put this together in about 15-20 minutes – it is a delicious pre-lunch or pre-dinner dish that tastes amazing and satisfying. We have enough left for about 3 days – it reheats really easily too if you don’t want to eat it cold – and becomes a super-fast 5-minute toast and serve meal after you make it initially. Definitely a keeper!!!
