Radishes can get a bad rap. I’ll admit I used to think of them as food only my parents would eat, not something a cool kid like me would eat…little did I know, you become your parents and radishes are now a regular on my weekly grocery list.

After the smashing success of my viral smashed Brussels sprouts and ranch smashed baby carrots, radishes are up next. Because of their high water content, radishes can be tough to get crispy. But through some science, I’m going to show you how to get these smashed radishes browned and filled with flavor.

These will be a smashing hit at the table!

  • More surface area is created by smashing the radishes. This gives us more space to tuck in seasonings and brown for more flavor!
  • Low carb radishes are a great keto-friendly alternative to potatoes.
  • No fussing with dabbing up water released during cooking or drying to switch pans. We use easier ways to get those crispy brown edges.

You’ll just need a few ingredients

Roasted radishes can be made with any seasoning you like—they’re a blank canvas. I keep these simple so you can add your own twist. Just be sure to use the parmesan! Jump to the recipe card for the full quantities and instructions.

  • Radishes: Grab two big beautiful bunches of radishes! The farmers’ market is a great place to get them; otherwise, you can get pre-washed and cut ones at the grocery store.
  • Seasoning: To keep it simple, you’ll just need lemon pepper seasoning (you can make your own or buy store-bought), salt, and olive oil. Olive oil helps to get the edges crispy and lends a bit of flavor. Avocado oil will work, too.
  • Cheese: Parmesan cheese helps to add a little more saltiness and makes these low-carb bites taste far from low-carb!

Do I need to cut the radishes?

Radishes can come in a wide range of sizes. That being said, you only need to cut them in half for this recipe if they are really big. Standard-size ones, smaller than a golf ball, can be cooked whole.

How to make smashed radishes

Making these is totally foolproof! You’ll basically just:

  1. Combine the radishes with the oil and spices.
  2. Bake them until fork tender.
  3. Smash them with a cup and sprinkle the parmesan.
  4. Bake again on broil until the edges are browned – watch closely!

Why this Recipe Works

Like I mentioned, radishes have a high water content, so they don’t get completely crispy. But this recipe does some things to encourage maximum browning and flavor!

  • Leaving the pan un-lined helps to promote better browning since the heat is directly transferred.
  • Season the radishes first so the oil and spice get all over the radishes.
  • Space out the radishes on the pan. This gives the hot air room to circulate on all sides, so we get crispy smashed radishes, not mashed radishes.

Ingredients 

  • 2 bunches radishes, about 1 lb
  • 2 Tbsp olive oil, 30 mL
  • 1 Tbsp lemon pepper seasoning
  • ½ tsp salt
  • ¼ cup grated parmesan, 113 g

Instructions 

  • Prep: Preheat oven to 400°F (204°C). If radishes are large, cut them in half. In a large bowl, combine radishes, oil, and seasonings.

  • 1st Bake: Arrange radishes in a single layer on a baking sheet and cook for 20 minutes, or until fork tender.

  • Smash: Use a cup to firmly smash each radish until flattened. Sprinkle parmesan over radishes.
  • 2nd Bake: Turn your oven to "broil" and transfer tray back into the oven on the middle rack. Cook for just a few minutes, watching closely until cheese is melted and radishes are browned at the edges.

Notes

Storage: Leftover radishes can be kept in the fridge in an airtight container for up to 5 days. To reheat, pop them in the oven or air fryer so they get crispy again.
To make these in the air fryer, follow the temps and times in our air fryer radish recipe. Cook them until tender, mix with the seasonings listed here (or the seasonings in that recipe, they’re delicious too!), smash, then return to the air fryer until crispy.
