Grapefruits are a delicious and nutritious addition to any kitchen! They’re packed with vitamin C, fiber, vitamin A, calcium, and potassium, adding a bright, tangy flavor to salads, grapefruit brulee, parfaits, and more.

How to Cut a Grapefruit

There’s no need to feel intimidated by this citrus fruit — it’s easy to prepare with the right techniques. Here’s how to cut a grapefruit into halves, unpeeled segments, and suprêmes.

Wash & Prep

Start by thoroughly washing the grapefruit under cold running water. Dry it off with a clean towel to remove any external residue, then grab a cutting board and a sharp knife.

Halves

Place the grapefruit on a cutting board. Using a sharp chef’s knife, slice it in half horizontally. With a small paring knife, run the blade around the inside edge of the membranes that separate the segments.

Sprinkle optional sugar on top, then use a small spoon to scoop out the segments from each half. This method is perfect for breakfast or a quick snack. Just don’t forget to squeeze the leftover juice into a cup after enjoying your fruit!

Unpeeled Segments

Using a paring or utility knife, start at the top of the grapefruit and make a shallow slice all the way around. Rotate the grapefruit, and make another shallow slice to end up with four sections. Be careful not to slice too deep to prevent cutting through the flesh.

Use your fingers to pull the skin away from the fruit. Continue peeling until all the skin and white pith are removed. Separate the segments and enjoy them as a snack like an orange. You can also make a slit in the membrane and peel it off to reduce the bitterness and tough texture.

Segments (Suprêmes)

Slice both ends off of the grapefruit to expose the pink flesh underneath. Stand the grapefruit on one of its flat ends. Starting at the top, cut downward, following the curve of the fruit to remove the peel and pith. Continue around the entire fruit until all the peel and pith are gone.

Hold the peeled grapefruit over a bowl to catch the juice. Find the lines (membranes) that separate each segment. Using a sharp knife, cut along the inside of one membrane down to the center.

Make a second cut along the inside of the opposite membrane of the same segment, then gently lift it out and place it in a bowl. Repeat with the remaining segments. 

Cutting Tips

  • Sharp Knife: Always use a sharp knife to ensure clean cuts and to avoid squishing the fruit. I find it helpful to use a fillet knife to peel a grapefruit for suprêmes.
  • Finger Safety: Tuck your fingers in while you’re cutting and place a damp paper towel under your cutting board to help stabilize it and avoid mishaps.
  • Segmenting Technique: When you’re segmenting a grapefruit, cut close to the membrane to get as much flesh as possible while avoiding the bitter pith.

How to Choose Grapefruit

  • Color: Look for grapefruits that are bright and evenly colored.
  • Firmness: They should feel firm but slightly give under gentle pressure.
  • Weight: Heavier grapefruits usually contain more juice.
  • Avoid: Stay away from grapefruits with soft spots, blemishes, or a dull appearance.

How to Store Cut Grapefruit

To maintain the freshness of your cut grapefruit, store it in an airtight container in the refrigerator. Properly stored, grapefruit can last between 3-5 days. The exact duration will depend on its initial freshness, so I suggest cutting it only when you’re ready to serve it.

Serving Suggestions

Here are some of my favorite recipes to use freshly cut grapefruit in:

  • Salad: Add segments to a citrus watercress salad with avocado and a light vinaigrette.
  • Grapefruit Brûlée: Sprinkle grapefruit halves with a bit of sugar and torch the tops for a caramelized treat.
