  • 1 14-oz package spicy vegan sausage, I used Impossible brand, 400 g
  • 4 cups vegetable broth, 1 L
  • 2 lbs Russet potatoes, cut into bite-sized cubes, about 3 potatoes
  • 2 15-oz cans chickpeas, drained, 425 g cans
  • ½ cup sun-dried tomatoes, packed in oil, sliced, 60 g
  • 4 cloves garlic, minced
  • ½ tsp each salt, oregano, crushed red pepper flakes
  • ¼ tsp ground black pepper
  • 2 cups chopped kale
  • ½ cup heavy cream, 120 mL
  • ½ cup grated parmesan
  • ¼ cup fresh basil, roughly torn

Instructions 

  • Brown Sausage: Add vegan sausage to a large skillet and cook until browned.

Notes

To make this soup spicier, increase the amount of crushed red pepper flakes or add a dash of hot sauce. Taste as you go to prevent it from becoming overly spicy!
If you prefer a thicker broth, you can mash some of the chickpeas and potatoes with a fork or potato masher after simmering.
You can keep leftovers in an airtight container in the fridge for up to 3-4 days. (This dish actually tastes better the next day as the flavors continue to meld.)
If you’re meal prepping a big batch of this Tuscan chickpea soup, freeze portions in containers for up to 3 months. Thaw them individually in the fridge overnight, then warm on the stovetop over low.

    What size crock pot do you use for the soup? This looks amazing! Also have you used non dairy cream and cheese? Wonder if it’s as good? My bf would prefer.

    Hi, I want to make this dairy free so my daughter can have some, can you advise on the amount of nutritional yeast I need in place of the parmesan? I know she tried the marry me Mushrooms and used too much NY so I don’t want to do the same!
