Struggling to plan meals that are quick, high-protein, and vegetarian? These weekly meal plans are designed to save the day (and your dinner table). Each week includes four dinners and one breakfast idea, plus a grocery list you can take to the store with you.

🍽️ On The Menu This Week
This week’s meal plan lineup is packed with high-protein and high-fiber recipes that will keep you energized and fueled all day long!
- Dinner 1: Golden Chickpeas pair them with basmati rice and naan
- Dinner 2: Veggie Burgers pair them with sweet potato fries or coleslaw
- Dinner 3: Tuscan White Bean Soup pair it with crusty Italian bread or a lemony arugula salad
- Dinner 4: Enchilada Stuffed Sweet Potatoes pair them with Mexican rice or elote salad
- Breakfast: Chickpea Fried Eggs pair them with breakfast potatoes
👉 How To Use This Meal Plan
I’ve included four vegetarian dinners in this meal plan to leave some days for leftovers or eating out. I’ve also included a breakfast idea, which can be enjoyed on any day!

- Head to the recipes (the QR codes will take you to them). You can click “jump to recipe” at the top of each post, or read the post to learn about substitutions and variations. You can print these recipes or save them on your phone.
- Check the grocery list, crossing off any ingredients you already have, or that are for recipes you don’t want to make.
- Grocery shop. I’ve sorted the list by section in the grocery store to make it quick! I personally prefer scheduling a pickup or delivery for Sunday morning so I can prep my meals for the week on Sunday evening.

💪 Meal Prep Tips
You can prep these things in advance to make cooking throughout the week even easier:
- Golden Chickpeas: Drain and rinse the chickpeas, dice the shallots, mince the garlic, and chop the thyme. Store them in containers in the fridge. Measure the seasonings and keep them in a small jar. When ready, just cook and assemble!
- Veggie Burgers: Cook and blend the veggie base and quinoa in a food processor, then refrigerate the mixture. When ready to cook, shape into patties and heat as desired for a quick and easy dinner.
- Tuscan White Bean Soup: Dice all the veggies and garlic. Measure and store the seasonings together in a small container. Rinse and drain the beans. When it’s time to cook, simply add everything into the pot in order!
- Stuffed Sweet Potatoes: Bake the potatoes, scoop out the flesh, and store them in the fridge, keeping the skins separately. Blend the cilantro sauce and keep it in a jar. On the day of cooking, just mix, stuff, and reheat the potatoes.
- Chickpea Fried Eggs: Rinse and dry the chickpeas, chop the tomatoes, and keep them in the fridge. In the morning, you’ll just need to heat, toss, and fry the eggs!
- On a budget? Buy dried beans in bulk, then cook them all on meal prep day and portion them out for the whole week!
