Blend: In a blender, combine all ingredients until smooth and creamy, about 2 minutes (Start with less vegetable broth, drizzling it in as you blend until you reach a saucy consistency.)
Heat: Transfer mixture to a medium saucepan and set over medium-low heat. Cook, stirring often, until warm and steaming, about 8 to 10 minutes.
Serve over cooked pasta, veggies, or with crispy tofu (see notes).

For crispy tofu, drain and press 1 16-oz block of extra firm tofu for 15 minutes. Pat dry, then cut into 1-inch cubes. Toss with 1 Tbsp cornstarch and seasoning of choice. (I like to use the same spice mixture as above!). Transfer to your air fryer basket then either spray or brush with oil. Air fry at 400°F (204°C) for about 15 minutes, shaking the pan halfway through cooking.Store in an airtight container or jar in the fridge for up to four days. Reheat on the stovetop over medium-low heat, stirring often, with a small splash of vegetable broth or water to restore the consistency. Not recommended for freezing since silken tofu-based sauces can separate and turn grainy after thawing.Can I use firm tofu? Not recommended for this recipe. Firm tofu contains less water and a denser protein structure that doesn't break down completely in the blender, even with extra liquid added. The result is a slightly grainy, less cohesive sauce. Silken tofu is specifically what makes the texture work here.Can I make this ahead? Yes. Make the sauce up to three days ahead and store in a sealed jar in the fridge. Reheat gently on the stovetop over medium-low with a splash of broth to loosen, stirring often.
