Ash Reshteh (Noodle Soup)

Enjoy the delicious herby flavors of Ash Reshteh, a traditional vegetarian Persian soup recipe made with legumes, noodles, and loads of herbs.

You'll Need:

Onion + Garlic Lentils + Beans Noodles Spinach Fresh Herbs Buttermilk Yogurt

Step 1

Caramelize Onions: Heat oil in a large pot. Add onions and cook, stirring often, until they turn brown and caramelize, about 20 to 30 minutes. Remove half of onions, then add garlic and turmeric to the pot.

Step 2

Cook: Add the lentils and water. Cover and cook for 20 minutes. Add chickpeas, kidney beans, noodles, spinach, and all herbs. Cover and cook until noodles are tender.

Step 3

Assemble: Ladle soup into serving bowls, topping with reserved caramelized onions, kashk, and minted oil.
