Made with just 4 ingredients, these microwave pancakes are a quick and easy way to bring breakfast on the go. Meal prep them in just minutes and customize with different variations like berries or peanut butter and chocolate chips. The possibilities are endless!

Instructions
Prep: For this recipe, you can either stir everything together in a large bowl and then distribute into containers, or assemble everything right in the containers. You'll need 5 microwave-safe meal prep containers.
Stir: Smash 2 ½ bananas (half a banana per container). Stir in 2 ½ cups high-protein pancake mix (half cup per container) and 1 ¼ cups egg whites (quarter cup per container). Sprinkle 2 ½ cups fresh or frozen mixed berries on top (half cup per container). Seal and refrigerate up to 5 days.
Microwave: When ready to eat, remove the lid and microwave for 1½ to 2 minutes, or until the pancake is firm. Be careful not to overcook, which can quickly make these pancakes chewy.
Enjoy: These pancakes need a sauce to really shine, so top them with your favorite nut butter and/or pancake syrup. Enjoy!

Storage: These can be stored in an airtight container in the fridge, uncooked, for up to 5 days. Once cooked, these will last up to 3 days in the fridge or 3 months frozen. However, reheating them a second time tends to make them chewy, so I recommend storing them in the fridge uncooked.What containers should I use? You want to make sure to use microwave-safe containers or mugs (if not meal-prepping them). I usually use glass containers but you can always check the bottom of the container for the microwave symbol to make sure they are safe to use.
