Toast: Lightly toast 2 slices sourdough (just partially toast them because they'll be heated again once assembled).
Mix: In a medium bowl, use a fork to roughly smash 10 pitted Castelvetrano olives. Stir in 1 Tbsp olive brine, ½ cup cottage cheese, ½ tsp lemon zest, and 1 Tbsp lemon juice.
Assemble: Spoon mixture evenly onto toast. Evenly top with 2 Tbsp shredded sharp cheddar.
Broil: Set oven or air fryer to "broil" and cook for 2 to 3 minutes, watching closely, until cheese is melted and beginning to turn golden brown.
Notes
Storage: This one is make-and-eat. The mixture keeps in an airtight container in the fridge for up to two days, so you can prep it ahead and spoon it onto fresh toast when you're ready. Don't store assembled toast. The bread goes soft fast once the cottage cheese is on it.
