Passion Fruit Curd


Making your own passion fruit curd is a delicious proposition. Take the best in-season fruit and combine with luscious egg yolks and butter for a creamy dreamy dessert!

Step 1

Warm Passion Fruit: Warm passion fruit pulp, sugar, and butter in a double boiler until warm to the touch.

Step 2

Temper: Add a spoon of  warm passion fruit mix to egg yolks, whisking to combine. Continue slowly adding passion fruit to the egg yolk until it is warm to the touch. Combine: Stream the egg yolk mixture into the bowl of passion fruit.

Step 3

Cook: Set the bowl back onto double boiler. Constantly stir and scrape the bottoms and sides of the bowl. Continue cooking and stirring until mixture has thickened to nappé consistency.

Step 4

Chill: Transfer to a jar or container, then place plastic wrap directly onto the passion fruit curd. Chill for at least 4 hours to allow curd to thicken.
