Look for firm, full-colored peaches with a pleasant aroma. They will get sweeter as they ripen, so gently squeeze them to see what stage they are at. Store peaches on your counter at room temperature until they reach your desired ripeness. To speed ripening, place them in a brown paper bag. Once the peaches have reached your desired ripeness, you can place them in the refrigerator.
