Take me back about five years, and whenever I’d hear the words “coconut milk” I’d be instantly mentally transported to a tropical island, drilled coconut in hand. It wasn’t until I started baking and cooking that I realized just how useful coconut milk can be in every day recipes!

Though I still wouldn’t object to the whole coconut-milk-on-a-beach vibe, I like to use coconut milk sans the tropics in my day to day life. Not only does it taste great, it also comes with many benefits great for blood pressure, heart health, nutrition, and more. It also just so happens to be wonderful for cooking!
